虎堅果 Tigernuts

虎堅果英文名稱Cyperus esculentus , chufa sedge(油沙草) or Tigernuts. 它雖被稱為堅果,實際視為植物的莖塊。虎堅果的化學成分具有塊莖和堅果的特性富含能量(澱粉,脂肪,糖與蛋白質),膳食礦物質(主要為鐵和鉀)和維生素E;他也含有大量的膳食纖維。虎堅果沒有麩質,故虎堅果粉可做為麵粉的替代品。具有椰子和杏仁的風味,它們的名字來自老虎條紋的外觀。可以直接從地下挖出來食用,也可烤,煮或榨汁食用。在西班牙虎堅果被稱為Chufa,是Horchata 的主要成分 (一種類似牛奶的甜味飲料)。

The English name of tigernuts is Cyperus esculentus, chufa sedge (oil sand grass) or tigernuts. Although it is called a nut, it is actually regarded as the stem of a plant. The chemical composition of tiger nuts has the characteristics of tubers and nuts. It is rich in energy (starch, fat, sugar and protein), dietary minerals (mainly iron and potassium) and vitamin E. It also contains a lot of dietary fiber. Tigernuts are gluten-free, so tiger nut flour can be used as a substitute for flour. With coconut and almond flavors, their name comes from the appearance of tiger stripes. It can be eaten directly from the ground, roasted, boiled or juiced. Tigernuts are called Chufa in Spain and are the main ingredient of Horchata (a sweetened drink similar to milk).
